Located in Kaohsiung, Posido Naples Pizza was formerly a brunch spot but transformed into a pizza specialty store in August this year. Owner Chen Jianwen has been making pizza for eight years, once represented Taiwan in international competitions, and won third place at the Asian Cup in Tokyo, Japan. He is the only pizza chef in Taiwan certified by both the APN and APPN, two prestigious Naples pizza associations.

"Posido" is Italian for "PLACE" in English. Speaking about the APN and APPN certifications, Chen Jianwen said, "These are currently the most representative certifications for making Naples-style pizza. I originally pursued these certifications to give myself a sense of achievement — kind of like how chefs take the Level 2 certification. It’s a meaningful credential." As a native of Kaohsiung, he hopes his hometown can enjoy authentic Italian pizza, which is why he opened the shop here.

Strawberry Mozzarella Pizza
The shop’s pizzas are special because they use Italian flour and an Italian oven, baked at over 400 degrees Celsius to create a chewier texture. The small spots on the surface enhance the wheat flavor, making the crust more aromatic and elastic with a distinct maltiness — a taste other countries can’t replicate with their flour.

Strawberry Croissant Pizza
Strawberries and strawberry cheese sauce are wrapped inside the pizza dough, then baked at high heat (400°C) until the mozzarella cheese becomes stretchy. Finally, it’s topped with almond slices, diced strawberries, and drizzled with condensed milk for a rich flavor.

Strawberry Baked Lasagna
While most lasagnas mix beef and pork, this shop’s specialty is pork. "Because so many people don’t eat beef anymore," Chen Jianwen says with a smile. They combine pork with Italian tomato sauce, simmering it for two hours. The layers are built up with béchamel and cheese, stacked around eight layers high, then finished with a layer of shredded cheese before being baked until golden. Finally, strawberries are added to highlight the dish’s unique flavor.
