Snack dishes can be creative too! Located on Yanji Street in Taipei, "Da Wang Cafeteria" operates as a casual eatery but specializes in unique "fried instant noodles," filling the alleyways with enticing aromas that draw in curious customers eager to sample the owner’s stir-frying skills.
"Opening a shop is about making money, and to make money, you need to offer something unique." Formerly unemployed, owner Wu Liming started from scratch with a food truck, embracing this philosophy and striving to become a "food truck with character." That’s how he began selling fried instant noodles originating from Kinmen, constantly challenging himself to innovate flavors in order to retain customers.
Since the Brasserie Liz on the first floor of Atour Hotel opened its first branch, “Ma Petite Brasserie My Little Bistro,” at BR4 in SOGO Fuxing, its relaxed dining space combined with elements of classic French country cuisine has been widely loved.
To date, Da Wang Cafeteria offers over 20 different flavors of fried instant noodles, but the must-try for first-timers is definitely the "Kimchi Century Egg Stinky Tofu Fried Instant Noodles." Wu Liming says, "One day, a wild idea struck — what if I tried combining kimchi, century egg, and stinky tofu? To my surprise, it turned out amazingly delicious, and the flavor is truly one of a kind." Curry, seaweed, century egg, and deep-well handmade stinky tofu are all thrown into the wok. First, an egg is cracked in to add silkiness during the stir-fry, and the noodles go in last. The whole process is done without adding oil, which makes the noodles especially chewy. Wu Liming adds, even when it's just a snack, it should still deliver on color, aroma, and taste.

The shop also offers a range of mixed fried rice dishes, the most unique being "Wasabi Smoked Chicken Fried Rice." Wu Liming had another brainwave and added kimchi to the mix, using only a bit of oil to stir-fry the dish. The rice grains come out distinct and fluffy, with a subtle wasabi flavor that’s refreshing rather than overpowering.
Also not to be missed is the hearty "Four-Gods Soup," made the traditional way using yam, coix seed, poria, gorgon fruit, plus lotus seeds, slow-simmered for four hours over a low flame. Paired with generous servings of pork intestines and stomach, it delivers a deeply satisfying flavor experience.
