Becoming an apprentice in his teens, Tada Sushi’s owner, Guo Qiyuan, has over 30 years of experience in Japanese cuisine. He personally goes to the market every early morning to select fish ingredients himself. He says, “I really can’t trust anyone else—only by doing it myself can I maintain consistent quality.” As a result, the types of sashimi available each day depend on the fish supply, but one thing that never changes is “freshness.” Guo Qiyuan explains that when selecting fish, he presses on the flesh—it must have elasticity to meet his standards. For swordfish, the fat must be evenly distributed to ensure good flavor. He also emphasizes that knife skills are crucial—different types of fish require different cutting techniques, slicing against the grain depending on the fish’s texture, and the thickness varies by species.

The “Premium Sashimi Donburi” includes at least three types of sashimi depending on the fish supply, and lucky customers might get four or five varieties.
