Located in Xinshe, Taichung City, the Mushroom God Scenic Restaurant is beloved by customers for its variety of mushroom dishes and specialized mushroom-themed hot pots. Among them, the pork floss rice with mushrooms may not be a grand dish, but it’s an absolute crowd-pleaser. Owner Lin Mingshun says that the pork floss, which is slow-cooked with great care, has a rich aroma and glistens temptingly on white rice. Many customers come specifically for the pork floss rice, and it’s common to serve over a thousand bowls on holidays.

Lin Mingshun explains that making pork floss rice with mushrooms is quite a process: diced pork belly is first stir-fried until fragrant, then set aside. Dried shiitake mushrooms are soaked in cold water until softened, drained, shredded, and then stir-fried before being set aside as well. The crucial secret to the delicious flavor of the Mushroom God pork floss rice lies next: fresh pork skin is first blanched to remove any gaminess, diced, and then stir-fried. When the aroma begins to rise, soy sauce, rice wine, and garlic are added, and the mixture is slowly simmered over low heat to extract gelatin and fragrance.

Finally, the stir-fried shredded mushrooms and diced pork floss are mixed in, along with dark soy sauce paste, soy sauce, rice wine, sugar, and pepper. This elaborate process results in pork floss with mushrooms that has a golden hue, intense aroma, and a glossy, mouthwatering appearance when poured over white rice—a taste that’s truly unforgettable.

Though the Mushroom God is famous for its diverse mushroom dishes and expertly crafted mushroom-themed hot pots, savvy foodies always come for the pork floss rice.
