Fresh burrata cheese (NT$520)
Inspired by the classic Italian tomato salad, this dish replaces mozzarella with burrata cheese flown in from Italy. The burrata, resembling a small white pouch, offers layers of soft, creamy cheese paired with slightly bitter and sweet arugula, tomatoes, salt, olive oil, and aged Italian vinegar.

Fresh mussels with herb white sauce (NT$360)
The mussels come from Matsu in Taiwan, are 2–3 times larger than imported ones, and reach their peak freshness and tenderness starting in May. The chef pairs them with a herb white sauce made with basil and parsley, and adds smoked pork collar for extra flavor.

The chef uses Italian tagliatelle pasta, partially cooked to about 70% done, then stir-fried with a specially made green pesto until fully cooked. It's finished with a drizzle of olive oil, Parmesan cheese, and pine nuts.

Featuring free-range beef, the fillet is grilled medium-rare over charcoal to preserve its juiciness and rich flavor. Guests are advised to wait 2–3 minutes before eating, allowing the juices to settle for a more tender and delicious texture. It comes with buttered asparagus, freshly shaved black truffle, crispy semi-cooked free-range egg, and Parmesan cheese.

The chef first sautés a generous amount of tomatoes and seasonal vegetables, then simmers them with fresh cod and broth to concentrate the flavors. This mixture is blended into a tomato and fish sauce, spread over a soft homemade crust, topped with Taiwanese white shrimp and mozzarella, and baked until crispy outside and soft inside—sweet, juicy, and chewy. Finally, arugula and lemon juice are added for a fresh, tangy aroma and added vegetable texture.
