Still crazy about Thunder God Chocolate? The hottest thing in Japan right now is actually "rare sugar"

When ordinary people mention specialties from Kagawa Prefecture in Japan, they might think of "Sanuki Udon," ranked as one of Japan’s top three udon noodles. But besides Sanuki Udon, there's now an even more popular"rare sugar"product, which has become the new favorite souvenir from Kagawa.

According to Japanese media reports, this sweetener, developed by Kagawa University, originated when Professor Ken Izumori discovered an enzyme in soil in 1991 that could convert natural fructose into rare sugar, and began researching rare sugar. It was later found that rare sugar contains 70% of the sugar content of regular table sugar, while also having the effect of suppressing blood sugar spikes and fat accumulation. Through collaboration between Kagawa University, the Kagawa Prefectural Government, and food manufacturers, a syrup with added rare sugar was successfully developed. After its launch in August 2013, it once achieved record sales of 60,000 bottles in a single week.
