Opened in 2010, the Sun Moon Lake Hotel has an elegant and simple architecture. At first glance from the outside, you might not guess why it was chosen by a booking website. The hotel has three standout features: it’s the only one right by the lake in the lake area, it offers the best viewing angle for the Sun Moon Lake Fireworks Festival, and it houses the only 270-degree scenic conference hall. The appetizers include fish pond king oyster mushrooms, plum sauce asparagus, and tomato cheese to whet the appetite. The soup is made by simmering burdock for 4 hours before blanching slices of beef in the hot broth to bring out a sweet flavor. The fresh salad uses vegetables and fruits from Yan Ting Farm, while the appetizer includes a bacon chicken roll. Before the main course, a vinegar drink made with plum from Shuili is served to prepare your palate for the rich main dishes. The main courses feature pan-seared yellowfin perch and roast spring chicken, both incredibly delicious. The perch is refreshing and tender, while the palm-sized spring chicken, marinated in local vegetables for 49 hours, is filled and roasted to perfection — the rendered fat lingers on the palate, highlighting the pure flavors of the ingredients.
