Responding to the growing popularity of pour-over coffee, the Taipei Garden Café at Tiancheng Hotel TICC World Trade Hall has introduced five pour-over coffee choices. These include light roast “Yirgacheffe” and “Cascalores,” medium roast “Guatemala” and “Kenya AA,” as well as dark roast “Mandheling.” Each cup is priced from NT$150 plus 10% service charge and is available during the daily afternoon tea time.
Zhao Zhiqi, Deputy Brand Marketing and PR Director of the Tiancheng Hotel Group, said that over 80% of the clientele at the Taipei Garden Café at Tiancheng Hotel TICC World Trade Hall are business travelers. To offer these guests a unique coffee experience, the service team specially learned pour-over techniques to carefully present single-origin coffees. After discussing flavor profiles with the roaster, the Taipei Garden Café team ultimately decided to grind the beans to a 3.5 setting. During the brewing process, water temperature varies according to the roast level: 88–92°C for light roast, 85–88°C for medium roast, and 82–85°C for dark roast. The coffee is brewed using a 1:10 coffee-to-water ratio.
