Recently, Taiwan’s food and beverage scene has quietly embraced a Thai trend. Following WOO CAF and Nara Thai Cuisine, another Thai brand has been introduced to Taiwan. Cheevit Cheeva is a dessert and ice shop from northern Thailand, specializing in Korean-style snow ice (Bingsu) infused with Thai flavors. Its signature melt-in-your-mouth texture is its biggest highlight. The entire store, with its white base and wooden furniture, feels like stepping into a café in northern Thailand.
Cheevit Cheeva offers a decent variety of ice flavors—not just its signature Thai milk tea snow ice, but also mango snow ice, chocolate lava snow ice, plain golden Korean rice cake snow ice, strawberry cheesecake snow ice, pudding caramel custard snow ice, matcha red bean snow ice, black sesame snow ice, and honeydew mascarpone cheese snow ice. There are also two types of honey toast and two types of slushies. However, due to it not being mango season and difficulty sourcing quality mangoes, the mango snow ice is currently unavailable.

The founder of Cheevit Cheeva, Pair, although a law school graduate, is a self-proclaimed dessert lover. Having a passion for traveling in Korea, she fell in love with the traditional Korean snow ice (Bingsu) and convinced her family to let her open a dessert and ice shop in front of their family spa. Because such ice treats were rare and delicious in northern Thailand, Cheevit Cheeva quickly became a popular spot in Chiang Mai—opening four branches within two years, outperforming their original spa business.
All of Cheevit Cheeva’s ice desserts are made using fresh milk, machine-shaved into snow ice, then scooped into cute semi-circles on the bowl before serving. Because it's made with pure milk, it maintains a delicate texture that melts in your mouth. Zhu, the owner who brought Cheevit Cheeva to Taiwan, mentioned that if the snow ice were made with powdered milk, a layer of residue would float on the surface as it melted.

Cheevit Cheeva doesn’t just offer snow ice—take their signature Thai milk tea, which comes with boba pearls, almond flakes, and condensed milk. The plain golden Korean rice cake snow ice is served with Korean rice cakes and almond flakes. Each snow ice flavor also hides a surprise: the Thai milk tea version includes grass jelly, while the honeydew mascarpone cheese snow ice features coconut milk pudding. As for the rest, you’ll have to discover them yourself.

Pair also developed a limited-edition flavor specifically for Taiwan—the black sesame snow ice, inspired by Taiwan’s unique sesame-filled glutinous rice balls. The egg yolk volcanic lava honey toast is drizzled with duck egg yolk, drawing inspiration from the popular egg yolk custard bun.
As for whether new flavors will be launched in the future, Pair confirmed that it’s definitely on the agenda. “If Taiwanese friends show a lot of interest in durian, we won’t hesitate to introduce it—just like we did with the milk tea flavor,” Pair said with a smile. “Durian is actually very popular in Thailand. If there’s enough demand from customers, we can roll out this flavor soon.”
