Ever since I picked up the phone to arrange this interview, orders have been pouring in nonstop. This 40-year-old “Jiale Cake Shop” in Taoyuan is famous for its Boston pie. While every traditional cake shop serves Boston pie with fresh cream, none can quite match its supremacy. If it were just media hype, the buzz would have faded after five or six years. But when my colleagues talked about this place, their expressions of nostalgia and delight made it clear that this is no ordinary shop.

Arriving at Jiale’s Zhongli factory, we were greeted by Li Ziying, the daughter-in-law of the second-generation owner. With a beaming smile, she immediately placed two slices of Boston pie on the table. “Try them first and get a feel for it.” The fluffy, towering cake had an incredibly soft texture, the fresh cream was smooth and not overly rich, and with each bite, it felt like eating a cloud. The rich aroma of milk wafted through the air—that’s their secret: they use powdered milk instead of powdered sugar sprinkled on the surface of the cake. The slight saltiness of the powdered milk tones down the sweetness, making the flavor even more refreshing.
