After opening Chou Chou, a French restaurant offering a fresh take on classic French cuisine in December 2016, Lin Ming-Chien launched LONGTAIL Restaurant & Bar in Taipei’s Dunhua commercial district in July 2017. Open until 2 AM, the venue serves international contemporary dishes alongside creative cocktails, fine wines, and craft beers—giving night owls a new spot to satisfy their late-night cravings.

LONGTAIL operates on an à la carte basis, with a simple menu divided into appetizers, main courses, and desserts. Hot dishes are available from 6 PM to midnight, while only cold dishes meant for pairing with drinks are served after midnight. The restaurant specializes in international contemporary cuisine, featuring unique dishes such as char siu bao reimagined as honey-glazed pork belly buns with Korean kimchi, resembling a Western-style burger. The braised oysters dish presents a Taiwanese stir-fry staple with a Western twist, while the French-style kaya toast deconstructs Singapore’s traditional breakfast into a delicious dessert.

In addition to contemporary dishes, LONGTAIL offers creative cocktails, fine wines, and craft beers to cater to diverse tastes. Bartender Sam Zhang Siwei has honed his skills at renowned bars and restaurants such as Haleakala, Halo, Wootp Taipei, Beau, and Shanghai’s D&D. Building on classic cocktail foundations, Sam incorporates local ingredients like oolong tea, almond tea, dark plum, and preserved fruits, along with herbs, crafting uniquely blended drinks.
