The Taiwanese restaurant group Shin Yeh’s brand Sibuya has launched a wild lobster hot pot where customers can personally select their preferred lobster from an aquarium. Shin Yeh states that diners can choose to lightly blanch the lobster or have the chef steam it with garlic. It is served alongside Hokkaido raw scallops, handmade shrimp dumplings, and a variety of mushrooms to enjoy the wild lobster hot pot.

The lobsters featured in this Sibuya promotion weigh around 400 grams each and are wild lobsters sourced from the coastal waters of the Philippines in Southeast Asia. Having grown along coral reef coasts and primarily feeding on small fish and shrimp in reef crevices, their meat is firmer and more elastic than that of regular lobsters, reaching near-sashimi-grade quality. The premium wild lobster hot pot set is priced at $2,880 + 10% (for two people), and includes appetizers, live wild lobster, Matsusaka pork platter, autumn vegetable medley, handmade dumplings, dessert, and fruit.
