The Yamamoto-ten shop in Kaohsiung, which has been open for over two years, was founded by a highly educated young person who is passionate about Japanese ramen. Willing to give up a million-dollar annual salary as an electronics industry elite, they went to Japan to study the spirit of ramen craftsmanship and the techniques of making ramen. The ramen here, made with premium alkaline noodles, is chewy and springy, paired with an eight-hour simmered pork bone broth that is milky white and silky smooth—turning a simple bowl of ramen into something truly special.

The shop’s basic flavors include pork bone, soy sauce, and miso. Recently, seasonal items have been introduced, including the “Yan Ramen” with 10 generous slices of char siu—lavish yet full of the shop’s warm hospitality.

Featuring carefully selected shrimp and scallops, flame-grilled char siu, paired with Japanese seafood scallop sauce, along with a rich pork bone and seafood broth, and topped with Yamamoto-ten’s exclusive sesame oil, this is a layered and flavorful bowl of ramen.

Made with natural squid ink and a rich pork bone and seafood broth, enhanced with roasted black sesame sesame oil, this is a seafood-packed bowl of ramen.

Colorful Gyoza Pork Cutlet
Using tender pork loin, paired with Korean kimchi, spicy octopus, Wanli flavor, and crab sticks, the pork cutlet is shaped like a gyoza, creating a dish that’s both a visual treat and a flavor explosion.

The surrounding meat resembles flames, making it especially eye-catching. While other shops charge extra for additional noodles, this ramen includes one free refill.
