▲ Fried Mantou from Doumen, Yunlin
Four years ago, in the small town of Doumen in Yunlin, I had an incredibly delicious golden-fried mantou that left me amazed. Back in Taipei, I couldn’t forget that taste. Unfortunately, we’re 214 kilometers apart and can’t meet often—only nostalgia remains. Later, I discovered that a newly opened brunch spot, “Fulai Breakfast,” not far from my home, also served it, so I immediately grabbed my gear and headed there on inline skates for a taste test!

It turns out that the boss, Liao Yankai, is from Yunlin, so he wanted to bring this familiar taste to Taipei. Although the mantou isn't made in-house, he searched through many handmade mantou shops to find one suitable for frying. "The texture of the fried mantou here is crispy on the outside and soft on the inside. Normally, after frying, the crust gets very hard, and it doesn’t have the same aroma as the mantou from this shop," said Liao Yankai.
