Recently, Korean frozen treats have embraced a trend toward natural ingredients. Low-calorie, low-fat ice creams can no longer satisfy Koreans’ dedication to health. Instead, products that emphasize being natural and free from artificial additives are winning over modern health-conscious consumers. One especially popular new trend is Brick pop, which makes popsicles from fresh fruit.
Brick pop
▲ Brick pop popsicles are made from 100% pure, natural fresh fruit juice, with no artificial additives. When the ice melts in your mouth, you can still taste bits of fruit – it really feels like you’re eating the fruit itself.

▲ Because they’re made from fresh fruit, the popsicles are a bit more expensive, priced around 3,000 to 4,000 KRW.

Handmade ice cream made to order – Sweet Vivian
In their quest for healthier lifestyles, Koreans are not only choosing natural ice creams but also paying attention to handmade, freshly made natural ice creams. In the past, many ice cream shops sold pre-made products for customers to choose from. But because the production process wasn’t visible, people couldn’t know where the ingredients came from, leading more and more to question just how many artificial components these products contained.

▲ Sweet Vivian prides itself on making handmade ice cream to order, emphasizing ingredient freshness so that customers can enjoy freshly made, creamy, soft ice cream – no longer limited to long-stored freezer versions preserved with additives.

▲ The store offers six different flavors of ice cream, priced between 4,000 and 4,500 KRW.

▲ Once an order is placed at the counter, staff begin making the ice cream on the spot. The first step is mixing and liquefying the ingredients.

▲ Typically, it takes over two hours to make ice cream, but to let customers enjoy freshly handmade ice cream right away, the shop uses liquid nitrogen – “cold at -197°C” – for rapid cooling.

▲ Earl Grey.
Hand-picked from the SFTGFOP1 grade, the highest quality organic-certified Darjeeling region in India, combined with natural bergamot oil using traditional methods. The fragrance of bergamot is intoxicating even before drinking, and its unique flavor and soothing, elegant taste create a smooth classic Earl Grey tea. The tea master’s sharp blending skill is even more admirable.

▲ The smooth ice cream carries the unique flavor and fragrant, elegant taste of Earl Grey. It’s even more amazing how delicious it is. Most ice creams use preservatives to stay fresh and extend shelf life, and emulsifiers to maintain their soft texture. But this handmade, eat-it-now ice cream, while melting quickly at room temperature, not only feels more like a snow cone, but also raises fewer health concerns.

▲ The milk-flavored ice cream even comes with a syringe filled with maple syrup – pretty fun.
