The Taiwanese branch of Japanese izakaya group Monteroza (Yumin Co., Ltd.), Shirakiba Izakaya, began offering a new menu starting January 2015. The new offerings include healthy dishes made with “shiokoji,” a traditional Japanese seasoning made by fermenting rice malt, salt, and water, as well as local commoner dishes long enjoyed by residents in the Kansai region, such as the “signature tray teppanyaki” and “kushiyaki.” Additionally, the popular Japanese “collagen drinks” have been incorporated into a beauty-enhancing menu, providing customers with a variety of choices.

The name “tray teppanyaki” is derived from the shape of the pan—reportedly created by Koreans living in Osaka who were not satisfied with the flavor of Japanese sukiyaki. They used a shallow, square pan resembling a “handheld winnowing basket” to cook beef, offal, vegetables, and other ingredients into a sweet and spicy flavor. Shirakiba Izakaya’s “signature tray teppanyaki” offers three meat options—beef, pork, and chicken—for customers to choose from based on preference.
In addition, the new menu also features a vegetable-rich healthy dish, “Pork Steambox Teppanyaki Loaded with Vegetables,” fish and meat tofu dishes made with shiokoji, as well as an original drink, “Collagen Drink,” made using syrup from “Mita Beverage.” One cup provides approximately 1,500 mg of collagen needed for women’s skin.
