Although the weather is still cold, cherry blossoms have begun to bloom. To celebrate the season, Shindol has introduced a spring-exclusive “Cherry Blossom Banquet” set menu. Inspired by the concept of enjoying and celebrating cherry blossoms, they’ve created a brand-new eight-dish-one-soup “Cherry Blossom Set,” incorporating the unique flavor of cherry blossoms into the dishes. Each set is priced at NT$3,800. Additionally, Shindol has brought the cherry blossoms indoors, allowing diners to enjoy the view of cherry blossoms while they eat.
Lin Chun-ming, head chef of Shindol’s culinary R&D team, explained that the cherry blossom elements used in the dishes mainly include edible yaezakura petals and Oshima cherry leaves, both of which are salt-preserved. For example, the dish “Endless Spring Silkworms” combines lobster, sakura shrimp, and cherry blossom leaves, served with either cherry blossom salt or matcha salt. The specially made cherry blossom ice cream also carries a natural floral aroma.
Additionally, the final soup dish, “Kyoto Premium Miso Soup,” doesn’t contain cherry blossoms, but Chef Lin noted that this miso is flown in from Kyoto, Japan. It’s made using the same brewing techniques as sake, resulting in a rich flavor.
