Taiwanese Breakfasts! Heartfelt “Rou Fan” in Changhua

Aquan probably needs no introduction—it’s quite a well-known spot. At 7:30 AM, there were still seats available, which made me happy. I said that the local foodies are really dedicated, rushing in early just to grab the meat. Come later, and you might not even be able to choose your preferred cut.


I ordered two bowls of rice, one piece of tendon, and one piece of second-layer meat. Of course, the tendon often mentioned when ordering rou fan in Changhua refers to the leg meat with tendon—you can simply ask the vendor for “one piece with tendon,” and they’ll know what you mean. It’s a limited delicacy.


What else did I get? A small plate of side dishes—fried tofu, sausages, crispy intestines, and dried squid—as well as a glass noodle soup and a shrimp ball soup. The table was full and hearty—I only realized after finishing that I hadn’t ordered the bone meat soup, which is apparently a popular item that sells out early in the morning.


The small bowl of rou fan had a well-balanced ratio of rice to meat. Look... not too much rice, just enough so that one piece of meat perfectly complements it—so you can go ahead and enjoy a second bowl, right?


True to the delicious style of Changhua rou fan, there’s nothing overly fancy about it. The braising sauce has a mild scallion flavor, tasting savory, salty, and fragrant. The highlight is the incredibly tender tendon, which still has a slight bounce to it. One bite, and you won’t want to eat it—well, not right away anyway...


For the second bowl, I had the lean-edge meat—smooth-skinned, sticky, and with tender muscle fibers. Does it need more description? It’s just a bit small, not quite enough to fully satisfy, leaving you savoring the memory afterward.


Tilt the bowl slightly, and you’ll see the pork skin rich in collagen—smooth and flawless, with all hairs carefully removed using tweezers instead of burned off, preserving the best texture possible.

The lightly blanched side dishes were also tasty. I especially liked the rehydrated squid—chewy, plump, and fragrant—and the fried tofu was well-seasoned, carrying that familiar, comforting old-school taste.


Some say the greatness of Changhua street food lies in its “sincere preparation.” Though I don’t eat a lot, I find this very true. For example, at Aquan, they remove hair from the meat using tweezers, scrape it smooth with a blade, trim off excess fat, shape it, skewer it, refrigerate it, and then braise it in aged sauce. The great flavor isn’t accidental—it’s the result of solid, earnest craftsmanship. That’s sincerity.

Later, I thought about how many street foods have lost their original charm (especially in big cities), often due to a lack of—or loss of—proper heritage. They’re no longer made step-by-step using traditional methods, or worse, ingredients are skimped on. Especially with current food safety concerns tarnishing Taiwan’s street food reputation, it’s truly a shame. Thankfully, there are still places where you can find simple yet wonderful bites.
