Kagoshima’s specialtiesSatsuma-ageis made by stuffing fish paste with seasonal ingredients such as lotus root, corn, burdock, and cheese. Though it looks plain—similar to Taiwan’s tempura—it has a lighter taste upon eating. The Satsuma-age, made with fresh local ingredients, offers a sweet yet chewy texture and is an important traditional dish of Kagoshima. Who says good food must look fancy? Even unassuming foods like Satsuma-age can deliver a surprising burst of luxurious flavors.

The “Tsukiyagean” factory in Kagoshima, which specializes in making Satsuma-age, is a highly hygienic food production facility. All rooms in the factory are under special pressurization, the food conveyor belt is equipped with a metal detector, and the air filter is hospital-grade. Every product undergoes sterile packaging. Hong Feiwen, Taiwan representative of the Kagoshima Prefectural Government, stated that food cleanliness is highly prioritized across Japan, so visitors participating in factory experiences must also wear full sterile gear before entering.
