Tokyo-Style Setagaya Ramen Debuts in Taiwan – Intense Ramen Battle Heats Up in Lane 216

The first Setagaya Ramen store in Taiwan began its soft opening on March 9, offering a different ramen flavor each day, limited to 100 bowls per day. On March 9, they served Setagaya’s signature ramen, and on March 10, it was pork bone broth ramen.

Ramen lovers, rejoice again! Following Sapporo Enjin Ramen and Onikinbou Spicy Miso Ramen, Tokyo’s Setagaya Ramen has now arrived in Taipei! The first Setagaya Ramen store in Taiwan began its soft opening on March 9, offering a different ramen flavor each day, limited to 100 bowls per day. On March 9, they served Setagaya’s signature ramen, and on March 10, it was pork bone broth ramen.

Since opening its first flagship store in Tokyo, Japan in 2000, Setagaya has expanded to numerous locations across Japan over the past 15 years. In 2008, it ventured into New York City, USA, becoming the only Japanese food outlet to win the “Best Of New York” award! Its first Taiwan store (Zhongxiao Store) also began its soft opening on March 9, with plans for an official opening on March 24. The location is none other than the competitive food hub of East District, “Lane 216,” right across from Eagle Ramen and near Sapporo Enjin Ramen—making the competition fiercer than ever.

For this first Taiwan store, the flavors being offered during the soft opening include “Setagaya Signature Ramen” (NT$220, Deluxe version NT$290), “Pork Bone Broth Ramen” (NT$180), “Pork Bone Sesame Oil Ramen” (NT$210), “Pork Bone Spicy Ramen” (NT$220), and “Pork Bone Style Tsukemen” (NT$230). During the trial period, one flavor is served each day, limited to 100 bowls, and will be sold out once reached. James, the deputy store manager of Setagaya Ramen Taiwan, stated that in terms of flavor, equipment, and preparation processes, everything is replicated directly from the Tokyo stores. To maintain quality, a section chief from the Setagaya headquarters in Japan, Mr. Tsuda Shuichi—who was also the former store manager at the Setagaya Ramen in Shinagawa—will be stationed in Taiwan for three months. Other chefs may also visit periodically.

Additionally, during the soft opening, only edamame (NT$80) is available as a side dish, while other toppings and snack items are not yet offered. Snack offerings include pork bone curry rice and yakisoba N...<饭、手羽先唐扬、肉汁烧饺子,价格都是100元。

Although the Setagaya Signature Ramen is described as having a double soup base, James explained that the broth is actually made from fish stock, pork bones, and soy sauce. Moreover, after boiling, the pork slices are seared once more using an imported Japanese machine just before serving. James noted that while all ingredients are sourced locally in Taiwan, the Japanese head office maintains strict standards for taste, which is why the seasonings are all imported from Japan.
