Highlighting the "Queen of Desserts"  Liz Brasserie to Open in Taichung on the 18th

The Atour Lifestyle Group entered the F&B industry in 2011. Today (the 18th), it announced that its Liz Brasserie will officially open at B2 of New Century APM in Taichung as a brand-new concept flagship store, focusing on "light" cuisine concepts to attract department store shoppers, and featuring the soufflé, hailed as the "Queen of Desserts," from the Liz patisserie as its highlight.

Atour Lifestyle stated that Liz Brasserie inherits the design elements of the Atour Lifestyle Patisserie Liz. The restaurant features unique window grilles and suspended crystal chandeliers, presenting a "French bistro"-style dining atmosphere. For the cuisine, it offers "light" French fare, changing the common perception of traditional French dishes being heavy with butter sauces and overly rich textures. Through refined cooking techniques, it reduces the body burden by using seasonings and fresh ingredients.

The star of the show, the "soufflé," is a courtly dessert. Legend has it that it was brought to France by an Italian princess during an Italo-French royal marriage and only became popular in Paris after the 18th century. Though made with simple ingredients, the soufflé requires exquisite culinary skill. When making a soufflé, not only must the oven temperature be strictly controlled, but the finished product also must not come into direct contact with cold air. The ratio of egg whites to sugar in the ingredients must be precisely balanced; otherwise, the soufflé will not rise perfectly—hence its title as the "Queen of Desserts."
