Bella Vedre (Bella Vedre Restaurant) is jointly run by two good friends, Gary and Tim. Tim, who loves wearing vintage suits, manages the front of house, while Gary leads an excellent team in the semi-open kitchen. Both have extensive experience in restaurants and hotels, which allows them to serve guests with great synergy.

The wooden semi-open kitchen always reveals the chefs’ focused expressions as they cook. Each dish served emanates Gary’s passion for cuisine. All ingredients here come from local farms and gardens in the Yarra Valley, some even from crops and livestock they raise themselves. As Chef Gary has long created dishes using fresh ingredients in his kitchen, he maintains a deep respect for these natural products from the earth. He believes that how can one master cooking techniques without knowing the origin of the ingredients?

Understanding the chef’s philosophy on food makes you even more appreciative when you taste his creations. Bella Vedre offers different dishes every day based on the season and available ingredients. They never rely on fancy plating tricks but instead focus on simple and genuinely good food — such as homemade olive bread spread with rich butter, tender and juicy roast lamb paired with vegetables and meat juices that carry a hint of sweetness. A main dish like this for just 25 Australian dollars is truly touching.
