Yilan Flower Wine Chicken — An Unconventional Hot Pot from Guangdong

The first establishment in Taiwan to introduce cuisine from Zhuhai, Guangdong Province, China, this spot emphasizes flavors and cooking styles that “transition from heavy to light, and from dry to moist.” Using a special sauce, chicken, rice cakes, and vegetables are braised until tender, then stirred together before eating. Add your favorite toppings and finally pour in the broth. The unique seasoning pairs perfectly with rice, making it ideal for sharing with friends.

Lin Dongfang Beef Noodles — A Beloved Urban Favorite

From opening time till closing, whether it’s mealtime or not, the place is always bustling. After nearly 30 years in business, the owner maintains daily fresh preparation, simmering beef for at least 6–7 hours and beef tendons for over 12 hours, along with a distinctive broth that has won over many taste buds. The braised dried tofu in beef soup is also a must-order side dish favored by regulars.

Kitamura-ya — A Late-Night Delight from Kansai, Japan

Since opening in February 2010, this eatery combines the life experience of Mr. Kitamura Toyoharu in Taiwan with recipes from his father, a former chef at a Japanese golf club, and his mother, skilled in home-style cooking. The restaurant places great emphasis on ingredient quality as well as cooking methods—for example, the filling for korokke (Japanese croquettes) is prepared for half a day, while the stewed beef tongue sauce is made by simmering beef tendons and vegetables for seven days.

Achun Congee Shop — A Perfect Match of Rice and Broth

A third-generation family-run business operating for nearly 50 years, it’s one of the signature dishes in Yan San Night Market. The broth is made by simmering big bones, vegetables, and mushrooms, and the rice is cooked directly from unpolished Guanshan rice into congee. It offers a slightly soft yet distinctively grainy texture, delicious in flavor. Paired with a few side dishes, it’s incredibly satisfying.
