Missing an exam led Jean-Paul Hévin—who had originally aspired to be an engineer—into the world of pastry, where he eventually became one of the world’s foremost chocolate masters.

Rich and intense cocoa flavors

Jean-Paul Hévin grew up with a father who loved sweets but a mother who wasn’t skilled at baking. To please his father, he began experimenting with making sweet pies at age 13, which planted the seed for his pastry journey. His focus on chocolate desserts stems from the ingredient’s endless possibilities—he finds joy in sourcing premium ingredients to pair with chocolate, with each combination sparking unique flavor explosions.

Jean-Paul Hévin once served as head chef at Lucien Peltier’s Tokyo patisserie for 18 months. His love for Japanese and even broader Eastern ingredients became a hallmark of his chocolate creations. Additionally, he replaced butter with cocoa butter and reduced sugar content, completely transforming the overly sweet image of chocolate—each bite delivers the deep, natural flavor of premium cocoa beans.

A stunning world of chocolate

When thinking of a chocolate boutique, one often imagines square chocolates—or bon bons—wrapped in a thin shell and filled with smooth, soft centers, available in over 20 flavors. Macarons inspired by chocolate also emphasize a crispy outer shell and soft, sweet filling, with about 12 flavors shipped to Taiwan weekly. Other offerings include classic chocolate almonds, playful chocolate lollipops, chocolate toothpaste, and more, offering a feast for the eyes.

All items in-store are flown in weekly from France. From bon bons and macarons to cakes, as well as the cocoa powder used for hot chocolate and the liquids for making mousses—everything is personally supervised and blended by Jean-Paul Hévin. Before and after opening the store, he visited Taiwan multiple times to observe the market and provide guidance on crafting delicious hot chocolate.

To cater to Taiwanese tastes, Jean-Paul Hévin created special dessert combinations. The “Ida” set includes a raspberry-hazelnut-chestnut chocolate cake, French custard with chocolate bits, macarons, and raspberry custard chocolate mousse. The soft chocolate cake has a delightful crunch from nuts, while the mousse is a melt-in-your-mouth foam—each element is utterly irresistible.

Also not to be missed is the Mini Désir de Paris new-style hot chocolate, featuring three flavors: Kyoto matcha zen, sweet and tangy raspberry, and spicy ginger. It offers a taste of hot chocolate’s many moods. There are also carrot and banana flavors—each one tempting you to take a sip.

As Jean-Paul Hévin believes tea and chocolate make a perfect pairing, the shop also offers Eastern and Western flavored teas, with JPH Smoked Tea being the best companion for enjoying chocolate.
