Xiaonanmen Fuzhou Fool’s Dry Noodles is located on Hangzhou South Road, right behind the National Chiang Kai-shek Memorial Hall. Nestled between the famously delicious Hangzhou Soup Dumplings and the Nanmen Zhongji Market, the shop may be small but its eye-catching sign makes it hard to miss.

The shop specializes in traditional stir-fried noodles from China’s Fujian Province, along with a variety of side dishes.

Fool’s Dry Noodles originates from Fuzhou-style dry stir-fried noodles. Its signature style involves boiling the noodles until cooked, topping them with chopped scallions, and serving them alongside a selection of sauces so diners can season to their liking.

When the Fool’s Dry Noodles arrive, they really are just white noodles and scallions. The table comes with sauces like black vinegar, soy sauce, chili oil, and chili flakes.
