Ningxia Night Market has long been one of the top local snack destinations in northern Taiwan. Not only has it been voted the most enjoyable and delicious night market, but it’s also a popular spot for netizens to grab a late-night bite or treat themselves. And this oyster omelet spot, just steps from the entrance of the lower level of Ningxia, has even been recommended by the Michelin Guide’s Bib Gourmand list. The roundabout-side oyster omelet is located just a few steps away from the intersection of Ningxia Road and Minsheng West Road, right in a covered walkway. The shop opens at noon every day to serve everyone, then takes a well-deserved break in the afternoon before reopening in the evening until the early hours. Basically, you can grab a bite whenever hunger strikes.

The place is less crowded around noon. The reporter arrived a little after 1 PM that day and had no trouble getting a seat without waiting. The interior is bright and clean, and all meals are made to order. Whether you’re taking out or dining in, remember to order first. The owner works quickly, and your food will be ready before you know it.

As for the star dish, the oyster omelet, the quality of the oysters is non-negotiable. The oysters used are freshly delivered daily from Tainan—super fresh with almost no fishy smell. Paired with crispy golden lard crisps, tender and crispy baby bok choy, and drizzled with the shop’s special sweet sauce, the texture is just right.

In terms of flavor, the reporter thought both the natural sweetness of the oysters and the combination of the batter and sweet sauce were excellent. However, the bottom egg was slightly overcooked in one spot, giving a hint of bitterness—but overall, it was still very tasty.
