Executive Chef Hsu Chung-hsien of the Drunken Moon Restaurant handpicks wild seasonal seafood from Penghu such as blood clams, stone crabs, sea urchins, and more. By combining them with different cooking methods, he creates dishes that offer uniquely rich flavors—from tender abalone soup, steamed crab with garlic butter, stir-fried sea urchin with egg white, to grilled scallops with miso and butter.
