As the Dragon Boat Festival approaches, Tapas-1, a Spanish restaurant in Taichung, is also joining the festive fun for the first time by launching “Spanish-Style Seafood Zongzi.” Handcrafted and inspired by the beloved Spanish paella, this unique zongzi offers a flavor profile that’s a refreshing departure from tradition, infused with international flair. To preserve the authentic texture and taste of Spanish rice, Tapas-1 serves these zongzi exclusively in-store, freshly prepared by the chef on the day of order. Available for just three days from June 19 to 21, each zongzi is priced at NT$320 and requires a one-day advance reservation.
This Spanish-Style Seafood Zongzi is inspired by the restaurant’s signature dish, Spanish paella. However, to cater to local preferences for zongzi rice texture, the chef substitutes Spanish round rice with Taiwanese japonica No. 9 rice. The process begins with sautéing vegetables such as onions, bell peppers, and tomatoes until fragrant, then adding the chef’s homemade premium spice blend and a touch of saffron for extra aroma. Next, it’s combined with a rich broth made from simmered fish bones and shrimp heads, along with white rice, and slow-cooked together. Just before serving, clams and pan-seared squid, shrimp, and mussels are added and gently simmered. The chef wraps the seafood-infused rice in zongzi leaves, fills the center with the seafood medley, and ties the zongzi using traditional Catalan cloth cords—typically used for securing cured ham and pork—adding an extra touch of Spanish charm.
