In recent years, dry-aged steak has become extremely popular in Taiwan, attracting food enthusiasts eager to savor its refined texture. A hotel in Taichung offers a “hidden gem” dry-aged steak with rich, layered flavors, including a top-grade rib cap option for diners. The highlight,is that it’s the only place in Taiwan where you can enjoy a late-night dry-aged steak meal until 1 AM.
Rare Bar & Steakhouse at Yuan Garden Hotel Taichung is an in-house bar and steak restaurant. While most visitors come for cocktails, the dry-aged steak here is considered top-tier in Central Taiwan. The restaurant has its own dry-aging room, and as you enter, you’ll see a display area mimicking the aging environment.

Before diving into the news, let’s understand what dry-aging is.
According to the U.S. Meat Export Federation, “Dry Aging” refers to storing beef carcasses or large cuts in a temperature- and humidity-controlled refrigerated aging room without any packaging, using natural enzymes to enhance flavor. Typically, the aging room is kept at around 0°C with humidity controlled between 50%–85%, and the aging period ranges from 20 to 45 days.
What about wet-aging?
Also according to the U.S. Meat Export Federation, “Wet Aging” involves aging beef in vacuum-sealed bags during refrigerated transport, using the meat’s own natural enzymes to improve flavor. Nowadays, to extend shelf life, many slaughterhouses and processors widely use vacuum packaging. Wet-aged beef in vacuum bags can typically last 75–90 days depending on freshness. This method is both convenient and cost-effective.

Rare Bar & Steakhouse offers four dry-aged and two wet-aged steak options — a rare and comprehensive selection in Taiwan.
