Stir-fried Shelled Shrimp
As the saying goes, “When it comes to eating fish and shrimp, Tianjin is home.” So, naturally, indulging in a feast of fish and shrimp is a must when you’re in Tianjin. In the past, seafood and freshwater delicacies in Tianjin were mostly steamed alive, then shelled and eaten with a dipping sauce. But in recent years, locals have refined their tastes, and stir-fried shelled shrimp is a prime example. These shrimp are shelled fresh after being briefly blanched, resulting in sweet, plump meat. They are then quickly stir-fried in a hot pan with thin slices of cucumber. Once plated, the cucumber is crisp and the shrimp are fresh, creating an appealing color and a refreshing taste that leaves a lingering aroma in the mouth.
