Egg Dumplings and Scrambled Egg Rolls
Egg Dumplings and Scrambled Egg Rolls
Egg dumplings and scrambled egg rolls mainly consist of eggs and shrimp or minced meat. To make them, first crack the eggs into a bowl, add salt, and stir with chopsticks. Then heat a small ladle over the fire, grease it lightly, scoop the egg mixture into the ladle, swirl it around the edges, then cook it slightly over the heat to form an egg wrapper. Next, place the shrimp or minced meat into the egg wrapper to shape it into an egg dumpling. It can be simmered with Chinese flowering cabbage or other vegetable ingredients, then placed in a bowl and thickened with a starch slurry to finish. The egg dumplings and Chinese flowering cabbage, in yellow and green, are served with a clear separation of the two colors.
