Korean-style Silver Fish
Korean-style Silver Fish, also known as "fried silver fish," is a traditional famous dish from the Tianjin region. Tianjin silver fish is one of the specialties of the Bohai Sea. It is larger in size than Taihu silver fish, white as jade, tender and delicious, and available all year round. The "Tianjin Bamboo Branch Ci" once praised it: “Silver fish and Shaoxing wine poured into the cup, its taste is like cucumber soup; how can jade eyes compare to golden ones, and how can the Haihe River compare to the Wei Sea?” During the Ming Dynasty, the imperial court once set up a renowned dish called “Korean-style Silver Fish” in Tianjin. When fried, the silver fish is fragrant and delicious, even better than when served in soup.
