Raw beef pho

Ingredients: 1000g rice noodles, 20g tender beef slices, 10g enoki mushrooms, 4 stalks of bok choy, a small amount of sliced onion, a small amount of minced scallions Broth ingredients: 1 beef bone, 20g beef brisket, 1 radish, 1/3 onion, 1 piece of ginger, 3 cardamom pods, 1 tbsp star anise, 1/3 tsp salt Seasonings: 1/4 tsp sugar, 1 tsp fish sauce

  【Preparation Process】

  1. Boil a pot of water. Crack open the beef bone, then put it in the hot water along with the beef brisket. After blanching, remove and rinse separately for later use. 2. Crack open the cardamom pods from the broth ingredients and place them in a small cloth bag together with the star anise for later use. Peel and cube the radish. 3. Prepare a pot of water, add the small cloth bag, beef brisket, and beef bone. Bring to a boil over high heat, skim off the foam, then reduce to low heat. Add 1/3 onion, ginger, cubed radish, and salt, and simmer for 1 hour. Remove the beef brisket, then continue simmering for another 3 hours. Finally, strain out the solids from the broth, leaving only the clear soup. Add sugar and fish sauce to season. 4. Once the beef brisket has cooled, slice it for later use. Blanch the rice noodles, bok choy, and enoki mushrooms separately. Place the rice noodles in a serving bowl, top with beef brisket slices, bok choy, tender beef slices, sliced onion, and enoki mushrooms. Pour the prepared broth over the top, and sprinkle with minced scallions to finish.
