Crystal Shrimp
“Crystal Shrimp” is one of the famous signature dishes at Shanghai Jing’an Hotel and has been rated as the “No. 1 Dish in Shanghai.”
Its development was once described by the renowned writer Liang Shiqiu in his book *Yashe Talks About Food*: “When it comes to shrimp, the Fujian restaurants do it best. I remember Zhongxintang on West Chang’an Street in Beiping was the only proper Fujian restaurant in the city, and their stir-fried shrimp had no added ingredients—just a full plate of shrimp, bright and translucent, tender yet slightly crisp.
The people of Fujian are unmatched in their skill at preparing seafood.” In the 1940s, master chefs at Shanghai Jing’an Hotel adapted the “Stir-Fried Shrimp” dish from Cantonese and Fujian cuisines, innovating both in cooking techniques and ingredient selection. With premium ingredients and strict preparation standards, they created a uniquely flavorful dish. When “Crystal Shrimp” is served, its exquisite aroma fills the air, and the shrimp glisten like pearls. No wonder Jing’an Hotel goes through over ten tons of shrimp every year.
