Use a whole yellow croaker (600–750g). First, fillet the fish, then cut the flesh into four small pieces. Marinate them briefly with a little egg white, salt, and starch. Wash and finely chop the potherb mustard.

Heat two tablespoons of oil in a pan, sauté the scallions and ginger until fragrant, then add the yellow croaker bones (with the flesh removed) and lightly sear them. Immediately pour in one tablespoon of cooking wine, add water and all the seasonings, and simmer for 10 minutes. Remove all the solids from the pot, leaving just the broth. Then add the chopped potherb mustard and the yellow croaker flesh, and cook together.

Meanwhile, blanch the noodles in a pot of boiling water, then transfer them to the yellow croaker broth. Simmer over low heat until the noodles are flavorful, tender, and cooked through. Turn off the heat and serve.

Yellow Croaker Stewed Noodles is a signature dish at Lan Kwai Fong Restaurant—deliciously fishy with tender meat that melts in your mouth.
