Sweet and Sour Hairtail
Introduction to Sweet and Sour Hairtail:
Ingredients: hairtail, vinegar (100g), sugar (175g), soy sauce (10g), salt (3g), clear broth (300g), minced ginger, minced scallions, minced garlic (a small amount each), wet starch (150g), peanut oil (1750g).
Method:
1. Remove the internal organs of the hairtail, wash it clean, and cut it into 6cm-long segments. Sprinkle some salt on the fish, marinate briefly, and evenly coat the whole fish with a layer of wet starch paste. 2. Heat oil in a wok over high heat until it reaches 70% heat, then add the fish. At this point, use a spatula to hold the fish and fry until it turns golden brown all over. Then remove and place it on a plate. Leave a little oil in the wok and heat it to 60% heat. Add minced scallions, ginger, and garlic, vinegar, soy sauce, sugar, and clear broth. Once the sauce thickens, add wet starch to thicken the sauce further. Stir in some shredded seasonal vegetables, drizzle with a little hot oil, quickly remove from heat, and pour the sauce over the fish to serve.
