Jinjiang Roast Duck
Jinjiang Roast Duck
Made by roasting force-fed ducks. The duck is plump, with a golden, glossy sheen. It can be eaten with the skin and meat separated—the skin is thin, melts in the mouth, and boasts an extraordinary aroma. Even when cold, it remains crispy. Best enjoyed hot, dipped in sweet bean sauce and scallions, and wrapped in a thin pancake. The meat is tender, the flavor mild, and it is rich yet not greasy.
