Harbin Dried Sausage
Harbin dried sausage is also well-known. As the name suggests, it is made by stuffing and then air-drying the sausage. It is slimmer than red sausage, and both its appearance and preparation method bear similarities to Cantonese-style “lap cheong,” except that it can be eaten raw, whereas lap cheong must be cooked. The flavor of dried sausage is somewhat similar to that of lap cheong, but perhaps due to being part of northern cuisine, it is more on the salty side. It is firm and chewy, offering a lot of texture, and is recommended as a snack.
