Huosuo
The use of fermented dough and roasting over a traditional furnace are essential features in the making of traditional Northeastern huosuo, resulting in a fragrant and crispy snack beloved by locals. However, with advancements in technology, quicker methods have emerged — electric ovens. As the name suggests, an “electric oven” uses electricity for heating, reducing cooking time, and the huosuo it produces is also more visually appealing compared to those made with traditional methods. Yet, most people still prefer traditional huosuo for the following reasons:
First, traditional huosuo uphold traditional production techniques, using naturally fermented dough without modern food additives commonly used today. This not only ensures the natural quality of the ingredients but also enhances the flavor.
Second, traditional huosuo have a uniquely outstanding taste — fragrant and crispy. Electric oven huosuo can never achieve the aroma produced by furnace roasting, which is a key reason why people favor traditional ones. The crispiness of traditional huosuo is also beyond comparison — no matter how well-made, electric oven huosuo can’t match that level of crunch.
Third, shops selling traditional huosuo still preserve traditional ways of enjoying them — a bowl of tofu pudding paired with a huosuo. Several people sit around a roadside table, eating while watching passersby and the plants along the street, creating a sense of comfortable ease. It also slows down the pace of fast-paced life, giving people time to better savor life’s simple joys.
Traditional huosuo offer more than just delicious taste and satiety; they provide people with time for reflection and an experience of returning to nature. The low efficiency of traditional production methods has gradually led to their abandonment by commercial vendors, and they are now being seriously replaced by electric oven huosuo.
