The flying dragon is a small bird species abundant in the forests of the Greater Khingan Mountains. There are two ways to prepare Flying Dragon Soup. One method involves cleaning and chopping the flying dragon meat into small pieces, then boiling them in salted boiling water for about two minutes before pouring the broth out of the hanging pot. A little seasoning is added before serving. The other method is to first sprinkle salt on the flying dragon meat, and when the water in the hanging pot comes to a boil, hold the flying dragon in one hand while continuously scooping the boiling water with a spoon and pouring it over the meat with the other, turning it as you go. Once it is about 60% cooked, place the whole piece of flying dragon along with chopped green onions into the pot and boil in the hot water for about ten seconds before pouring out and serving.
