Salmon in Soybean Paste Sauce
First, score the salmon and braise it in soy sauce, then deep-fry it in a pan. Leave some oil in the pan, sauté scallions and ginger, then stir-fry diced meat and bean paste. Add clear broth, vinegar, salt, MSG, sugar, chili powder, and the fried salmon, then simmer over low heat. Once the sauce has infused into the fish, drizzle with sesame oil and sprinkle with chopped cilantro to serve.
