Braised Dog Meat
Cuisine: Northeastern Chinese cuisine
Features: Rich and savory sauce, spicy flavor, and tender dog meat.
Ingredients: 1000g fresh dog meat, 15g dried red chili peppers, 25g garlic cloves, 15g ginger, 25g garlic, 75g vegetable oil, 50g cooking wine, 50g soy sauce, 10g toasted sesame powder, 2g monosodium glutamate, 20g refined salt.
Preparation Method:
1. Soak the dog meat in clean water for one day.
2. Peel the garlic, wash, and cut into sections; peel the garlic, crush into pieces; peel the ginger, wash, and slice thinly. Wash the chili peppers, remove stems, and cut into sections. Set aside.
3. Take out the dog meat, wash, drain, and chop into 3cm cubes. Place in a pot. Add water until it covers the meat. Bring to a boil, remove the meat, rinse it three times with clean water, and drain well.
4. Heat oil in the pot, add the dog meat, and stir-fry over high heat for 4 minutes. Add cooking wine and soy sauce. Once the water has evaporated, add the scallion sections, chili pepper stems, and water. Simmer over low heat until the meat is tender. Then add salt, garlic pieces, monosodium glutamate, bring to a boil, transfer to a bowl, sprinkle with toasted sesame powder, and serve hot.
