Fiddlehead ferns are also known as fist vegetables, cat’s paw, or dragon head vegetables (in some regions they are called “wolf’s head”). Their Chinese name is jué (蕨), and they are also referred to as dragon head vegetables or ruyi vegetables (如意菜). They belong to the Pteridaceae family. These ferns thrive in sunny areas of shallow mountainous regions and are commonly found in sparse mixed coniferous and broadleaf forests. The edible part is the young, unopened leaf bud.

Fiddlehead ferns grow wild in forests, mountains, and pine woods. They are unpolluted green wild vegetables that are not only rich in various vitamins needed by the human body but also offer benefits such as cleansing the intestines, improving digestion, and relaxing tendons and activating collaterals. Before eating, the fiddlehead ferns are blanched in boiling water and then soaked in cold water to remove any off-flavors, making them ready to eat. The processed fiddlehead ferns have a fragrant, smooth, and silky texture. When seasoned, they are refreshing and delicious, making them an excellent choice for pairing with alcohol. They can also be stir-fried, dried, used as filling, or pickled into canned products.
