  Hericium erinaceus (scientific name: Hericium erinaceus) is a traditional and precious delicacy in China, known for its tender flesh, fragrant aroma, and delicious taste. It is one of the Four Famous Dishes (Hericium, bear’s paw, sea cucumber, and shark’s fin), often referred to as “the mountain treasure Hericium, the seafood bird’s nest.” This fungus from the family Hericiaceae has a cap surface covered with velvety, flesh-like spines about 1–3 cm long. Its fruiting body is round and thick, white when fresh, and turns light yellow to light brown when dried. The base is narrow or slightly short-stemmed, while the upper part is swollen, with a diameter of 3.5–10 cm. From a distance, it resembles the head of a golden snub-nosed monkey—hence the name “Hericium”—and also looks like a hedgehog, earning it the nickname “hedgehog mushroom.” Hericium is an exceptionally delicious mountain delicacy, with tender and flavorful flesh, often called “vegetarian meat.”
