Stir-fried shredded pork with chili and fiddlehead fern
Fiddlehead fern, also known as dragon head vegetable or as-you-wish vegetable, is referred to as “fist vegetable” because its tender sprouts curl up like fists. It is a type of wild vegetable that has gradually gained popularity in recent years. Before eating, it should be boiled in hot water first, then soaked in clean water for one or two days, changing the water several times a day. After that, it is stir-fried with meat and seasoned with oil, salt, and other spices. It has the effect of sterilization and detoxification. It can be found in restaurants of all sizes in Yichun, costing about 20 yuan per plate.
