  Fernbrake is also known as ox hair fern or purple arrowroot, and is commonly called large nest vegetable, pheasant head, or broom vegetable. It belongs to the Osmundaceae family, with the scientific name Osmunda, and is a perennial herbaceous plant. The edible part of fernbrake is the tender, unexpanded spore-bearing leaf, which holds high nutritional value; it is said to promote blood circulation, soothe the stomach, and improve hearing and vision. It is a natural wild herbaceous plant. With a crisp texture, delicious taste, and minimal fiber, it is rich in protein, organic minerals, and various vitamins, making it highly nutritious. It is regarded as a "mountain delicacy" and enjoys an international reputation as a "pollution-free vegetable." It is abundantly produced in the mountainous areas of Shiyan, with just Fang County alone yielding over 200 tons per year. The female plants (which are flat-round or ear-shaped) are harvested, with their coiled heads, leaves, and fuzz removed. They can be eaten fresh or blanched in boiling water for 3–4 minutes, then dried through sunning and rubbing. Before eating, they are soaked in warm water to rehydrate.
