  The forest frog of China’s Changbai Mountain, also known as the "háshámǎ," is referred to as "xuěhā" in Hong Kong and Guangdong. It is a rare amphibian. In spring, the forest frogs emerge from rivers and breed in ponds, then move to forests to feed on insects. Until late autumn, when it rains, they return to rivers to hibernate. This is a well-known economic frog species in China that combines medicinal, tonic, and cosmetic benefits. The oil found in the bellies of female forest frogs caught in autumn matures and is dried and extracted as oil. It is also now called "snow frog oil" or "snow frog paste." Háshámǎ oil is the mature oviduct of the female frog containing eggs. It contains 18 amino acids, 13 inorganic elements, 9 vitamins, and multiple bioactive factors such as complex polypeptides, especially rich in three types of sex hormones — estradiol, testosterone, and progesterone.   .【Ingredients】

  Main ingredients: 25g forest frog oil, 50g red dates, 50g lotus seeds with cores removed.

  Seasonings: 300g rock sugar.

   【Method】

  (1) Place the forest frog oil in a container, pour boiling water to submerge it, cover and let it steep until softened. Then place it in water to remove black threads and impurities, and rinse clean.

  (2) Set the wok over high heat, add rock sugar, and pour in water to bring to a boil. Then skim off the foam and strain through a fine sieve. Wash the lotus seeds with hot water. Wash the jujubes, remove the pits, and set aside.

  (3) Combine the forest frog oil, lotus seeds, jujubes, and rock sugar water in a stewing cup, cover tightly, and steam in a steamer over high heat for about 1 hour until soft and glutinous. Serve directly in the original cup or divide into 10 small bowls.

  【Ingredients】 100g soaked forest frog oil, 10g soaked mushrooms, 10g winter bamboo shoots, 10g peas, 25g lard, 1.5g salt, 10g soy sauce, 5g Shaoxing wine, 10g scallions, 10g ginger, 2.5g sesame oil, 15g wet starch, 350g chicken stock, 1g pepper. 

  【Effects】 Stimulates appetite, regulates qi, nourishes yin and beautifies skin. Suitable for sallow complexion, poor appetite, physical weakness, hematemesis, night sweats, and female sexual dysfunction. 

  【Preparation】 

  ① Slice the winter bamboo shoots into small diamond shapes, cut the soaked mushrooms into thin slices, chop the cilantro, and dice the scallions and ginger. 

  ② Heat lard in a pan, sauté the scallions and ginger when hot, add soy sauce and chicken stock.   【Ingredients】 100g soaked forest frog oil, 3 egg whites, 10g peas, 10g cooked ham, 5g winter bamboo shoots, 5g soaked mushrooms, 25g lard, 300g chicken stock, 2g salt, 2.5g MSG, 10g Shaoxing wine, 10g prickly ash water, 20g wet starch, 10g scallions, 10g ginger. 

  【Effects】 Nourishes yin and moistens dryness, calms the heart and soothes the nerves. Suitable for irritability, insomnia, dry cough, hoarseness, red eyes and sore throat, restless fetus, postpartum thirst, diarrhea, and burns.

  ① Beat the egg whites in a soup bowl, add chicken stock, salt, and MSG, stir well with chopsticks, and steam in a steamer until cooked (soft tofu-like texture). Set aside. 

  ② Slice the ham and winter bamboo shoots into small diamond shapes; halve the mushrooms; dice the scallions and ginger and slightly crush them with a knife. 

  ③ Heat lard in a pan, sauté the scallions and ginger when hot until fragrant, then add chicken stock.   【Ingredients】 25g soaked forest frog oil, 50g soaked white fungus, 5g rape greens, 5g winter bamboo shoots, 5g ham, 5g Shaoxing wine, 5g prickly ash water, 2g salt, 2g MSG, 500g broth. 

  【Effects】 Nourishes kidney and essence, moistens lung and yin. Suitable for post-illness or postpartum weakness, tuberculosis cough, hematemesis, night sweats, neurasthenia, and female sexual dysfunction.

  ① Wash the forest frog oil, remove the tendons and black spots. Cut the rape greens, winter bamboo shoots, and ham into small diamond shapes. 

  ② Soak the white fungus and forest frog oil in boiling water, then remove. 

  ③ Add broth to the pan, along with Shaoxing wine, prickly ash water, salt, white fungus, forest frog oil, ham, rape greens, and winter bamboo shoots. When the soup boils, skim off the foam, add MSG, and serve in a bowl.

  4. Chicken Paste Forest Frog Oil 

  【Ingredients】 75g chicken meat, 125g soaked forest frog oil, 10g blanched rape greens, 10g soaked magnolia slices, 10g cooked ham, 15g fresh mushrooms, 2 egg whites, 25g lard, 2.5g salt, 3g MSG, 10g Shaoxing wine, 10g prickly ash water, 450g chicken stock. 

  【Effects】 Nourishes kidney and essence, strengthens the body. Suitable for physical weakness, sallow complexion, tuberculosis cough, hematemesis, and night sweats. 

  【Preparation】 

  ① Remove the white tendons from the chicken meat, pound it into a fine paste with the back of a knife, then mix with egg whites, chicken stock, salt, Shaoxing wine, prickly ash water, MSG, and forest frog oil. Cut the rape greens, magnolia slices, cooked ham, and fresh mushrooms into thin slices. 

  ② Heat chicken stock in a pan, when boiling, scoop the mixed forest frog oil and chicken paste by hand and slowly add it to the soup. When it forms pearl-like shapes, add the ham, fresh mushrooms, rape greens, magnolia slices, salt, prickly ash water, MSG, and Shaoxing wine. Boil again, skim off the foam, and serve in a bowl.

  II. Forest Frog Oil Medicinal Dishes

  5. Pearl Forest Frog Oil 

  【Ingredients】 25g forest frog oil, 0.2g pearl powder, 75g chicken breast, 25g pork fat, 15g ham, 15g winter bamboo shoots, 15g cucumber, 2 egg whites, 10g cilantro, 2.5g salt, 1.5g MSG, 5g prickly ash water, 5g scallion bits, 5g ginger bits, 500g chicken stock, 0.2g sesame oil. 

  [Efficacy] Nourishes skin and beautifies complexion. Suitable for female sexual dysfunction, rough skin, postpartum weakness, pulmonary tuberculosis cough, hemoptysis, night sweats, neurasthenia, and other conditions. 

  [Preparation Method] 

  ① Place the forest frog oil in a bowl, soak in boiling water, and remove all sinews, membranes, and black spots.

Skim again, drizzle with sesame oil, and serve in a bowl.

  6. Assorted Forest Frog Delight 

  [Ingredients] 25g forest frog oil, 25g pine nuts, 50g apple, 50g banana, 50g orange, 50g pear, 50g pineapple, 50g candied fruit.

  [Preparation Method]
