Open Smile
Open Smile is a type of deep-fried snack among Beijing street foods. It gets its name from the way it splits open at the top after being fried.
Open Smile is made with flour, maltose, white sugar, eggs, sesame seeds, and oil, using about 200 grams of oil per jin (500g) of flour. The method involves cracking and removing the shells of eggs into a bowl, adding a small amount of baking soda, then adding the appropriate amount of white sugar and maltose. Next, mix white flour with water and oil, stir well, and pour the mixture evenly into the bowl. Stir everything together and knead into dough. Divide the dough into small pieces. Mix the sesame seeds with water, roll each small piece in the sesame without pressing or shaping them further. Heat oil in a pan and fry the sesame-coated pieces until they split open, then they’re done.
Open Smile is sweet, fluffy, and crispy—extremely delicious.
