Yellow-fleshed peaches, commonly known as yellow peaches, are a type of peach belonging to the Rosaceae family, Prunus genus, and are named for their yellow flesh. Yellow peaches are highly nutritious, rich in antioxidants (such as α-carotene, β-carotene, lutein, lycopene, and vitamin C, which combat free radicals), dietary fiber (the abundant pectin in the flesh is a form of dietary fiber that is easily absorbed by the human body), as well as iron, calcium, and various trace elements (with notably high levels of selenium and zinc, surpassing other fruits—earning them the title “king of fruits”). When eaten, they have a firm yet tender texture, are sweet with little acidity, possess a fragrant aroma, and have moderate moisture content, with a sugar content of 14–15 degrees when ripe. Regular consumption can aid digestion, lower blood sugar and lipids, combat free radicals, reduce dark spots, delay aging, boost immunity, and also stimulate appetite, making them a health-promoting fruit and a nourishing peach.

Yellow peaches have long been praised by the public for their golden flesh and rich aroma.

Ancient legends often referred to peaches with both yellow flesh and skin as “golden peaches” or “immortal fruit.” The *Hailu Suishi* describes them as “as big as goose eggs, with a golden hue.” The yellow peaches of the Dalian region are among the finest descendants of the natural hybrid seedlings of China’s ancient yellow peach variety, “Early Ripening Golden Peach.” Among Dalian’s yellow peaches, those from Jinzhou District are the best in quality and highest in yield.
