Colorful Snowflake Scallops
Colorful Snowflake Scallops is a signature dish of Dalian, featuring scallops adorned with egg white "snowflakes" that resemble silvery-white flakes studded with pearls. The dish is decorated with seasonal vegetable leaves, carrots, chili peppers, and other ingredients arranged into colorful patterns. It is tender, fresh, light, refreshing, and not greasy. The preparation method of Colorful Snowflake Scallops has a long history and is characteristic of Liaoning snacks.
Main ingredients: Fresh live scallops, egg white.
Side ingredients: Red bell pepper, green peas, scallion, vermicelli, garlic, steamed fish soy sauce.
Preparation method:
(1) Separate the scallops into half shells and carefully remove the meat intact from the shells;
(2) Soak the vermicelli in hot water until softened, blanch the green peas, and place them inside the shells;
(3) Stir-fry the egg white in oil until it forms a snowflake-like texture, then add the scallop meat;
(4) Place the stir-fried snowflake scallop meat on top of the vermicelli and garnish with diced red bell pepper;
(5) Lightly stir-fry minced garlic in oil, then mix with minced ginger, sugar, and steamed fish soy sauce to make a sauce. Drizzle the sauce over the scallops, sprinkle with pepper and chopped scallions, cover, and steam for about five minutes. Remove and drizzle with a little sesame oil before serving.
